Oysters and mussels: the iodized taste of Ile de Ré specialties

The island of Ré is a sanctuary for the gustatory “treasures” of the sea. Oysters are the star product. It is farmed by some sixty oyster farmers who perpetuate an ancestral know-how. In this region, oysters first develop in the open sea, then mature in the claires, where their nutty flavor becomes more pronounced. One of the best ways to enjoy their delicious freshness and sea spray flavor is to taste them directly in the oyster huts located along the bike paths. Mussels are also a speciality of the Ile de Ré, delighting the palate. In oyster huts or certain restaurants, you can enjoy a mussel éclade. This age-old cooking method gives mussels a smoky, braised flavor.

Salt, a well-preserved Ile de Ré speciality

For centuries, the salt marshes of the Ile de Ré have been the scene of a precious harvest: salt. This natural “white gold” is harvested by hand by the salt producers who perpetuate this tradition. During the summer season (between June and September), you can watch these farmers of the sea harvest coarse salt or fleur de sel, depending on the weather conditions. On the Ile de Ré, around 400 hectares are cultivated by 90 sauniers. Many of them offer to buy their produce on the open market.
Fleur de sel from the Ile de Ré is considered one of the finest in the world. The reason for this incomparable taste? It naturally contains magnesium and trace elements.

Salicorne, the “green gold” of the Ile de Ré

Also known as “sea gherkin”, salicorne is one of the specialties of the Ile de Ré. This plant, harvested in salt marshes, goes wonderfully well with fish. A little subtlety: the taste of samphire varies with the seasons.

In spring, glasswort is fleshy and crunchy. It can be eaten raw or in salads. In summer, it is preferable to cook and bake it, as its taste is more bitter. Glasswort adds a salty touch to your dishes or sauces.

The early potato, a protected Ile de Ré speciality

On the Ile de Ré, the dry, sandy soils are ideal for growing high-quality vegetables, including the famous early potato. Protected by a PDO (Protected Designation of Origin), it is prized for its fine skin and subtle flavor. It is the star of the spring table. It can be enjoyed simply with a knob of butter and a little salt.

Ile de Ré wines, a wide range of flavours

The wines of the Ile de Ré have nothing to envy their continental cousins. Vineyards on the island benefit from favorable geological conditions (light, chalky soil) and a favorable climate. The mosaic of landscapes creates a mosaic of terroirs and a broad palette of flavors and colors. Whites, rosés, reds and even sparkling wines: variety is the order of the day.

On the island of Ré, you can also taste the famous pineau des Charentes with its sweet, fruity taste. This liqueur wine, governed by an appellation contrôlée (AOC), has a flavor unique to the island. The must (grape juice before fermentation) is blended with cognac brandy with fresh, marine notes produced on site. The island of Ré is also part of the Cognac production area. It is distinguished by its fruity notes and pleasant roundness.
