Oysters and mussels : specialities from the island of the Ile-de-Ré with a taste of iodine

The island of Ile-de-Ré is a sanctuary for the gustatory « treasures » of the sea. Oysters are flagship product.
Oyster are farmed by around sixty oysters farmers who perpetuate an ancestral know how. In this region, the oysters first develop in the open sea before maturing in the oysters beds, where they develop their nutty flavour.

One of best ways to enjoy their delicious freshness and their sea spray flavour is to taste them directly in the oysters huts located along the cycles paths. A gourmet break symbolise the art of living à la Rétaise.

Mussels are also a speciality of Ile-de-Re a delight for the palate. In oysters huts or some restaurants, you can enjoy a mussel éclade. This age-old cooking method gives mussels a smoky, braised flavour.

Salt, a well preserved speciality of the Ile-de-Ré

For centuries, the salt marsches of Ile-de-Re have been the scene of a precious harvest : salt. This natural « white gold » is harvested by hand by the salt workers who carry on this tradition. During the summer season (between June and September), you can watch these farmes of the sea harvesting coarse salt or flower of salt, depending on the weather conditions.

On the Ile-de-Re, around 400 hectares are farmed by 90 salt producers. Many of the moffer to buy their produce via a short distribution network.

Salicorne, the « green gold » of the Ile-de-Re

Also known as the « sea gherkin », salicorne is one of the specialities of the Ile-de-Re. Harvested from the salt marshes, this plant goes wonderfully with fish. A little subtlety : the taste of salicorne varies according to the seasons.

In spring, salicorne is fleshy and crunchy. It can be eaten raw or in salads. In summer, it’s better to cook it and bake it as its flavour is more bitter. Salicorne adds a salty touch to your dishes or sauces.

Early potatoes, a protected speciality of Ile-de-Re ?

On the Ile-de-Ré, the dry, sandy soils are ideal for growing high quality vegetables, including the famous early potatoe. Protected by a Protected Designation of Origin (PDO), it’s appreciated for its thin skin and its subtle flavour. They are the stars of the spring table. Its can be enjoyed simply with a knob of butter or a little salt from the region

Wines of Ile-de-Ré, a wide range of flavours

Wines of Ile-de-Re have nothing to envy from their continental cousins. On the island, vines benefits from favourable geological (light, chalky soil) and a favourable climate. The mosaic of landscapes creates a mosaic of terroirs and a wide range of tastes and flavours. Whites, rosés, red and even sparkling wines : variety is here.

On the Ile-de-Ré, you can taste the famous pineau des Charente with its sweet, fruity flavour. This liqueur wine, governed by a Protected Designation of Origin (PDO), have a flavour that is unique on the island.

The grape juice before fermentation is blended with cognac brandy with fresh, marines notes produced on the island. Ile-de-Re is also classified Cognac production area.
It is distinguished by its fruity notes, the source of pleasant roundness.
